just look at these. how can you be in a bad mood while looking at these little beauties? doesn't it just make your heart soar to think that it's a beautiful edible piece of pure, unadulterated joy?
these are little poppyseed cakes. they're topped with a lavender butter and blackberry topping. the poppyseed cakes have buttermilk in them which makes it a little creamier and denser without adding extra calories. it also takes a stick of butter, so let's not begin to think that it's health food. the blackberry topping is just frozen blackberries (thawed) blended with icing sugar and lemon juice. you can't really go wrong with proportions, i'd say a good few tablespoons to about a cup or a little more of blackberries. then, to get a little glaze and to play up the soft butteryness, i stirred in a tablespoon or two of melted lavender butter, which was not entirely necessary but am convinced it made it taste all the more spectacular.
