bean burgers, the return

these burgers were just amazing. they were the white bean burgers that i spoke of in a previous post, but this time the other ingredients (the shredded carrots, the shallots, the mushrooms) all were subjected to mushroom stock and red wine reductions to get a nice, concentrated flavor. they turned this deep brown color and tasted sweet and salty without sugar or salt. i'm not going to post a recipe because i can't really recall everything i did, but there you have it.
