awesome day!


FRIENDS. i am just so excited. just so, so excited. when we left california i thought i'd have to mail order all of my chiles and corn husks and such when i got some time to really seriously get into mexican food. not so! as i happened to come across a random article of the commercial appeal regarding a latino and asian market combined into one awesome place of bliss.
i literally squealed when i found a wall of chiles that i was willing to pay 10x more for at Penzey's spices. just look at these little bagged jewels!


and another great find (i really really really had to pace myself.) was fresh rendered pork fat, which is a common ingredient and is what makes great flour tortillas, tamales, mole, etc.

very excited!

so as the school i work for is going on a passover holiday for 2 weeks, i've got some big projects coming up to stock the freezer with; a big batch of salsa verde, corn and flour tortillas, tabasco sauce, roasted poblano base, tamales, moles, adobo seasoning paste and achiote.

verrrryyyy excited!!!
