So after this weekend's review of exactly how much i spend per month on groceries, i've declared myself under self-imposed budget restraints. Six hundred dollars a month on groceries? On average? For two people? That's insane!
So. My new goal is about 450 a month, which works out to about $100 a week.
What does this mean? This means that I'm raiding my pantry and doing good work with humble beans, legumes, and other canned things.
This week started well with the baked beans, but now i'm scrambling to find ways to use lentils, rice, split peas, garbanzo beans, and white navy beans. I'm up for the challenge, but i'm really having a tough time finding appetizing ways to use these things that aren't just run-of-the-mill soups or loafs. i need some good taste that will be appetizing for a non-vegan palette, and this might actually be quite a challenge.
i checked a vegetarian cookbook that i've had forever to see if they have any suggestions. they had the basic lentil soup and sort of a repetitive recipe list of "things to do with pulses" but ended up just being variations on the same curry, soup, or loaf bake theme... i'm a woman on a mission!
