so i tried to re-create the awesome breakfast pie thing that i made about a month ago, the one lined with flour tortillas and cooked potatoes, then topped with egg and sauteed leeks and tomatoes with balsamic vinegar. i could see room for improvement, and room for de-mystifying, but this wasn't the case. it looks delicious -and we ate all of it- but i think i'm going to try it again, this time with chili powder and maybe some other tweaking.
i tried to increase the probability that other people would actually make this by substituting the bottom layers (tortillas and potatoes) entirely by lining the bottom with frozen shredded potatoes that i had seasoned, making it so that only the egg mixture and topping were the only real things needing attention.
the whole thing turned out a little lacking... so hopefully when we're both back working i'll try this big-batch breakfast again and try to move it a little bit more towards perfection. in the meantime, i took a lot of photos with our new camera, so i thought that it would be sinful to let them go to waste.
